Shalgam-Gobhi-Gajar ka achhar / Turnip-Cauliflower-Carrot pickle

Here comes the North India's most favorite winter pickle recipe.It is a Punjabi specialty, fully packed with both taste and nutrition. This pickle contains most easily available winter vegetables that are preserved in oil and salt with the pungency of mustard seeds that slowly envelope all the vegetables in an amazing taste. These are not only loved by elders but will be your child's favorite achhar. What better way to feed some nutrition to ourselves??
This pickle is best served with hot parathas and a dollop of butter.


Ingredients:-

  • Sabji(Shalgam,Gobhi,Gajar) / Vegetables(Turnip.Cauliflower,Carrot) - 2.5 kgs
  • Garam masala** ( bina dhaniya ke/ without dried coriander) - 25 gram
  • Adrak/Ginger - 125 gms
  • Lehsun/ Garlic - 125 gms
  • Sirka /Vinegar- 1cup
  • Gudd/Jaggery - 125 gms
  • Rai /mustard seeds- 50 gms
  • Tel/oil - 250 gms
  • Namak /Salt - To taste or 3-4 spoons
  • Red chilli - 4 spoons
